Title: Curry Onion Quick Bread

Chop one whole onion. Make rings or half-rings out of roughly 1/4 more onion, for topping.
Stir together the flour, sugar, baking powder, curry powder, salt, garlic powder, and buttermilk powder (if using powder to mimic buttermilk). Stir until everything is nice and evenly distributed.
Add the chopped onion and gently toss it in the flour to cout every piece well.
Melt the butter in the microwave. In a separate measuring cup, measure the buttermilk (or water if using powder). Crack in the eggs and stir well, then add to the melted butter. Stir well then quickly pour into the dry ingredients. Stir until everything is combined in the batter, with no dry spots.
Pour the batter into the prepared loaf pan and smooth with a spatula. Top with slices of onion and gently press them into the batter.
Bake for 35 minutes and then check with a toothpick. Expect it to need another 15 minutes or so. Once a toothpick inserted into the center comes out clean, that puppy's done! Let cool for at least 5 minutes before serving warm or at room temp.

I: 5. Hardest thing is the buttermilk. buttermilk powder worked perfect
T: 4.5. Extremely, extremely good. Great with butter, very oniony and savory. Had it with taco soup to great effect.
